Ben Hindmarsh is a 41 year old Sydney native who made Saigon home after relocating from Bangkok 4 ½ years ago. After his long career in breweries, craft beer bars and cocktail bars, he and his wife Mimi finally opened their own mom-and-pops-run bar Nightcap where guests are treated to a beautifully designed and comfortable space with unique and delectable cocktails.
While this new dad is busy running the bar and working on a few other future projects, we chat with him as he shares a cocktail recipe inspired by Mark Your Wall Color Palette #08
Hi Ben, tell us more about yourself.
After living across SEA since 2003, I moved to Saigon in 2018 to work in taprooms and bars, always with the goal to open my own spot.
And in April 2022 we finally opened Nightcap Saigon! A late-night bar with serious pours in modern classics. We focus on staying true to classic recipes and use those inspirations to tell stories in our unique signature cocktails.
By coming to Nightcap, you're coming into our home to be greeted and served by myself and wife Mimi. We want people to feel at home in Nightcap. A place they can stop by for a conversation and a little tipple.
What is the color of your aura Ben?
Funny enough, I recently did an Aura test online. It was that green, the 2nd green from the left on the palette.
Tell us about your cocktail creations and how was it inspired by this Mark Your Wall Color Palette #08?
The Laughing Elephant that we serve at Nightcap carries the same colors on the palette. It was inspired by Thai green curry. All the sweet flavours and colours of a green curry make this drink unique for Saigon. It's one of the drinks that surprises guests the most and very popular at our small family-run bar.
